1/3/13 to 1/13/13 Post Holiday, tail of Winter Break

Thu. 1/3/13 - Roast beef dippers.  Boys came back from Texas the evening before and came back to the house early to spend the rest of Winter break at the house.

Fri 1/4/13 - Publix Fried chicken, rice, sugar snap peas, grapes - Tom's friend Alex stayed over

Sat 1/5/13 - Steak N Shake.  A little different from usual Saturday night going out but first choice Chilli's was way too busy, the change of pace was fun

Sun 1/6/13 - Fried Rice .  My first attempt at this, need to make the rice day before next time as it should be chilled first so it doesn't get too sticky when cooking it again.

Mon 1/7/13 - Went out to Buffalo Wild Wings to do something a little bit fun for the very last day of winter break.

Tue 1/8/13 - Roast chicken, corn, taboule salad (I didn't really cook this, it was Publix again )

Wed 1/9/13 - Curried Lentils with Rice.  I love this one and cooking it makes me really feel like I'm really cooking.  I cook the lentils in the morning and then do the currying in the evening.  Andy gets the rice started for me.

Thu 1/10/13 - Spaghetti Night!!

Fri 1/11/13 - Salmon, rice, sugar snap peas.  Was just Tom and I tonight as Andy was at a friends house.

1/12/13 - Brick Oven Pizza!  Andy's friend Connor was over and ate out with us.  My parents came over after dinner so we could try and finish the Monopoly city game started before Christmas.

1/13/13 - Steak "Restaurant".  No, we didn't go out, I said we would just pretend.  Flank steak, corn, potatoes au gratin and salad

A pretty good week for eating, reasonable mix of eating out and at home.  I could do better, but I could be doing a lot worse!

12-10-12 to 12-16-12, and Christmas

12/10 Monday - Roast Beef Dipper sandwiches

12/11 Tuesday  - Costco pizza with added pepperoni and fresh basil from backyard, fried
rice for Tom - then, later made homemade chocolate chip cookies, my first attempt ever.  They came out pretty good!

12/12  Wednesday -  broiled Chicken (perdue premarinated breasts), rice, broccoli  (I'm usually a griller, this was the first time I used the broiler by myself - yeah, kind of sad, but I do like the grill a lot better!!

12/13 Thursday - spaghetti and meatballs with pepperoni mixed into sauce (andy loved this), I love spaghetti night.  The old pot we used to have for spaghetti is gone, but I had this huge pot that I originally bought for making beer.  It was way too big but is kind of fun in a way.  Nice having some new rituals.

12/14  Friday - Domino's pizza ( whoops )

12/15  Saturday - Grillmaster night - new york strip (it was on sale, about same price as sirloin), homemade cherry soda, grilled asparagus, rice, fruit salad  (had a friend of one of the kids over for dinner)

12/16  Outback Steak  house

12/18 - Special night out with the kids for my birthday, parents treated us to Bonefish which I had picked then we stopped back at the house for cake before I took the kids back to the apartment

12/25 - My first ever Christmas dinner cooked and served by me.  My parents originally wanted us to come over but I wanted to let the kids spend as much time at home for Christmas as possible.  I cooked filet mignon for myself and the kids, lobster tails for all of us, and portobello mushrooms for my parents, along with grilled asparagus and roasted potatoes with rosemary.   My parents brought some bread, salad, and dessert.  I also picked out a bottle of Rioja with dinner and some

12/26 - we didn't do too much today besides relaxing.  For dinner it was assorted leftovers.

11-22-12 to 12-2-12

Thanksgiving and the Next Week

I thought I would cover a few more things besides just dinner this entry.

Thanksgiving Day - the boys were with Jenny so I accepted an invitation for dinner at a friends house.  I offered to make a sweet potato casserole with pecans.  I had one in mind that was sweeter or more dessert like, but ended up with one that was healthier and still pretty good.

Black Friday - the boys were sleeping in even after getting back from my run.  I made them pancakes which were from an Ihop style recipe.   Sometime later that weekend my youngest told me that he liked that I "just started randomly making pancakes".  Glad I made them!

For dinner I grilled some chicken which I picked up at Target.  We stopped by there for some other things and I didn't feel like making separate stop at the grocery store.  I threw it into a bag with some random marinade from a bottle and it came out really good.  Can't remember what else I had that night, probably corn and mashed potatoes.

Saturday - out to eat at Carraba's

Sunday - Ok, it was supposed to be grill night but due to various errands and already being out, we stopped at Westshore Pizza - 2 slices and a drink for $6.00.  Hadn't been there for a long time

Monday - Back to cooking!  Well, sort of.  Since it was supposed to be Tae Kwon Do night, planned something simple: soup and grilled cheese.

Tuesday - Ok, real cooking today.  Beef barley stew.  I didn't have beef stock like the recipe called for so I just used a couple of vegetable bouillon cubes.  As added carrots (I actually had a vegetable peeler this time), can of tomatoes, and a can of corn.  I love this stew and I've like using the slow cooker a lot each time I've used it (it's also the rice cooker too).

Wednesday - Enchilada night.  Used the Old El Paso kit again which has the tortillas, meat seasoning and ranchero sauce.  Add chicken and shredded cheese.  Served with refried beans on the side.  The boys and I love this dinner.  I think I might try non-kit version next time!

Thursday - Spaghetti night with meatballs, fresh parmesan cheese and garlic bread.

Friday - I promised younger son salmon for dinner but I knew older son didn't care for salmon.  Store was taking longer than planned and I ended up getting more salmon than I usually do as well as a prepared piece of Chicken Cordon Blue.   Turned out we were having an extra dinner guest, glad I had extra salmon.  The chicken had been baking when I put the salmon on.  Checked on it a few minutes later to find the grill cold - out of gas.  So, cooked the salmon in the oven.  Mashed potatoes on the side and random freezer vegetable (creamed spinach).

Saturday - Older son went to a friends house, so I took younger son to the local Chinese/Japanese restaurant.

(12/2) Sunday - Worked on several things during the day including putting up Christmas lights.  I'm not sure where the time went.  By the time I finished with the lights it was already 6:00.  So, we went out again.  Went to a good local Thai restaurant - Thai Samurai.
